I've been asked to share this yummy recipe. WARNING!!!! stop eating at one or extra exercise may be needed to work them off.
Makes 25 biscuits
125g unsalted butter
1/2 cup caster sugar
3 tablespoons milk
1 1/2 cups self-raising flour
1/4 cup custard powder
1/3 cup desiccated coconut
FILLING
75g unsalted butter, sotened
3/4 cup icing sugar
2 teaspoons milk
1/3 cup jam
Preheat oven to 180 and line 2 trays with baking paper.
Cream butter and sugar, add milk and beat until combined. Sift flour and custard powder together and add to the bowl with the coconut. Mix to form a soft dough.
Roll mixture into small balls and place on trays, make sure they are spaced to alow for spreading, press with a fork.
Bake or 12 - 15 minutes until golden then transfer biscuits to a wire rack to cool completely before filling.
For filling, beat the butter and icing sugar in a small bowl until light and creamy. Beat in the milk.
Spread 1 bisuit with 1/2 teaspoon of filling and 1 with 1/2 teaspoon of jam then press togather.
